As always, go out and catch some chum salmon then smoke it


Ingredients:                                                                                                      

4-5 oz smoked chum ( you may substitute smoked Ling cod}

½ cup fresh bread crumbs

1 clove garlic

1/8 tsp salt

fresh ground pepper to taste, whose taste…..your taste

1 egg

¼ cup fresh parsley chopped

1 green onion chopped fine

2 tbsp mayo

 

Cooking:

take a slice of good bread and the clove of garlic and run it through the blender

break up a piece of smoked chum and put in a bowl 

add bread crumbs with garlic, mix should be about 50/50

mix in salt pepper, parsley, chopped green onion

lightly beat the egg and add to bowl,

add the mayo and mix everything with a spoon don't break up the chunks

preheat pan add 1 tbsp olive oil

scoop spoon of mixture and  place in pan shape into patty

repeat until pan is full

cook on medium heat for about 3 minutes 

or until golden brown then turn and

cook another 2 or 3 min. on the other side.

plate and top with a dash of cayenne.

makes about 8 medium size cakes
