First step: Go out and catch a ling Cod.


Ling Cod cut into even pieces about 1 1/2 " cubes

1 finely chopped jalapéno,

2 or more cloves of garlic finely chopped

1 or 2 green onions chopped

1/2- 3/4 cup salsa
(alternate, dissolve 2 tblsp. achiote paste in lime juice and add in 1 tsp cumin seed at start, leave out salsa)

2 tbsp. lemon or lime juice


Sauté Ling Cod cubes in pan with olive oil about 2-3 minutes and set aside

Mix jalapénos, garlic and green onions in your pan re-introduce ling cod turning till each side is seared.

Add Salsa or alternate and lemon juice sauté till cooked, 3-4 minutes

Serve with finely chopped cilantro.

Great on rice in tacos
