First go out and catch a Ling Cod, then smoke it.


8 oz smoked ling cod in chunks
1/2 a chopped onion
1/4 chopped pepper
1 clove garlic chopped
1 or 2 plum tomatoes, chopped in chunks
chopped parsley
2-3 oz white wine
3-4 oz heavy cream
1 tbsp butter
salt & pepper
optional fennel seed


in a stainless pan sauté onions, pepper, butter salt & pepper (fennel seed or fresh fennel) till onions are translucent
add wine and reduce 
add cream and cod and tomato(s)
reduce by 1/2
top with chopped parsley
serve with rice or pasta, or with spuds
it is a lot like smoked black cod, delicious
